So I have these bananas that suddenly became ripe out of nowhere and I needed to do something with them. I don’t know how I stumbled across this recipe, but I decided to experiment with making my own granola. Adapted ever-so-slightly from this awesome website, I give to you…banana granola! All of my tupperware has disappeared since the beginning of the year, so I’ve been recycling glass jars and using them as storage (probably should have just done that from the beginning…more sustainable). I used to be anti-mason jar snacking/drinking because I felt like the people who used them were just using them to look cool and hipster-ish. But then I realized a) to each their own and b) glass jars actually do look kind of cool and reducing waste is good for the environment. That said, I did feel like quite the hippie when I was eating my homemade granola out of a recycled glass jar. Oh well.
I didn’t have nuts or pumpkin seeds so I left those out and I added 1/4 tsp almond extract and some chopped up dates. Who knew granola making would be so easy? I’ve been munching on it all day and I’m excited to eat it for breakfast tomorrow. There isn’t a better summer breakfast than a big bowl of granola, fruit, and yogurt.
