Ready for a blast from the past?
This is the farthest behind I’ve been with the weekly popcorn posts (so there will be another one in a few days…oh well). Whenever I think of butterscotch I always think of those hard candies that grandparents (mine included) always had in their cars or in little bowls on the counter. Before making the popcorn tonight, I couldn’t even remember the last time I had had butterscotch. Don’t worry, all of the sweet (literally) memories of it came flooding back in rather quickly.
And this recipe was super easy. On the stove top, mix together (on low heat) 1/3 cup corn syrup, 6 oz butterscotch chips, and 2 TBSP butter (I used a substitute). When completely mixed, pour over 1/3 cup popped popcorn and mix until its all covered!
